A magnificent Italian cheese with all the tangy, savory flavors and aromas one expects from the Dolomite mountains. Alta Badia has the mountain flavors of spice, fruit and earth without being overpowering or too rustic. It is a truly elegant cheese with a dense texture that is very smooth and sliceable. It is made with fresh whole milk sourced from a few select dairy farms. After 180 days of ripening, it takes on its typical light brown rind and develops a firm cheese consistency. The cheese is slightly straw-colored, very flavorful, and aromatic. It is aged a minimum of 6 months but usually between 8- 10 months.
