Blu del Moncenisio is a fairly creamy full-flavored cow’s milk blue
cheese. It has an intense, pungent, peppery taste but a sweet finish.
The cheese has a straw color and is compact with moderately defused
blue-green veins. Blu del Moncenisio originated in the mountains of
Piemonte in the area of the Moncenisio Pass, on the border of Italy and France, which makes it similar to the family of French blue-veined cheeses.
