Cacio de Roma

This soft, fresh, sheep's milk cheese is produced on the countryside of Rome. It can be used as a mild table cheese to be served with fruit, dried figs, etc. It's excellent for melting as a topping for pizza or in pasta and it's also great in fillings for ravioli.
