Cacciotone Foglie di Noce
Made by the Perenzin family in the Dolomite mountains of the Veneto, this cheese is made from the organic milk of goats that live in the purest of environments: the air is filtered by the surrounding mountains, and the terrain is completely secluded. Wrapped in walnut leaves foraged from local trees by the cheese-maker, this cheese takes on a nutty, long-lasting, mellow flavor. It has a slightly dry and grainy texture.
