Canestrato

From the pecorino family, this basket shaped cheese is made from sheep and goat milk. Canestrato is aged between six and twelve months. A soft cheese with a nice bite, this is a typical Basilicata shepard’s cheese. It has an intense, spicy flavor prized by the residents of Basilicata.
