Made by the Perenzin family in the Dolomite mountains of the Veneto, this cheese is made from the organic milk of goats that live in the purest of environments: the air is filtered by the surrounding mountains, and the terrain is completely secluded. Aged 60-180 days, this cheese has a delicate and slightly moist interior and clean, “not barny,” goat’s milk flavor.
