Cacciotone with Olive Oil and Pepper
Made by the Perenzin family in the Dolomite mountains of the Veneto, this cheese is made from the organic milk of goats that live in the purest of environments: the air is filtered by the surrounding mountains, and the terrain is completely secluded. The rind of this aged cheese is rubbed with extra virgin oil and freshly cracked black pepper. During aging, the cheese is infused with the fruity flavor of olive oil and subtle peppery overtones. Cut off the rind before eating—its peppery intensity will overpower the delicate cheese.
