Crucolo is a favorite cheese from the Trentino-Alto Adige region of northern Italy. This unpasteurized cow’s milk cheese has a straw color and small holes running throughout. Crucolo is aged at least two months, and is similar in flavor and texture to Swiss alpine cheeses. Crucolo has a mild, sweet and buttery flavor with a strong aftertaste, and its creamy texture makes it perfect for melting.
