Fontina Valle D'Aosta, Alpeggio
Fontina comes from the northwestern tip of Italy in the Aosta Valley, nestled between the Swiss and French borders in the Alps. The recipe is over 700 years old. Fontina Valle D’Aosta DOP, a raw cow’s milk cheese, is washed and aged for three months. Every wheel of Fontina is stamped with a symbol of the mountains and the name “Fontina.” This is a seal of quality which sets it apart from the many other (less spectacular) cheeses which use its name. Inside its hard rind, Fontina Valle D’Aosta is rich, soft, and buttery, with earthy, fruity, and caramel notes. It is a perfect melting cheese, ideal for a panino, fonduta, or omelet, and delicious with apples, pears, and nuts.
