Goat's Milk

Goat’s milk has a distinctive lemony tartness because of its high acid content. Because of goats’ low yield, their milk is used often in the production of fresh cheeses from Italy's northern regions, but not frequently used in producing Italy’s famous large long-aged wheels. It is slightly lower in fat than cow’s milk, making it the leanest milk used in cheese-making. More easily digested than cow’s milk, goat’s milk cheese is often preferred by those with an intolerance to lactose.
