Boschetto

This Tuscan cheese is made with a mixture of cow's milk and sheep's milk infused with thin slices of local truffles that are mixed throughout the curd before it is pressed into its final form. Aged a minimum of three months, this special cheese offers a flavor which is perfectly balanced between the fragrant earthy truffles and the flavor of the slightly piquant sheep’s milk. It is ideal for shaving over pasta, polenta and risotto, as well as fresh vegetables like asparagus. We like it best liberally grated over a frittata or some eggs.
