Made in Romagna in the region of Emilia-Romagna, this pecorino is pungent and tangy with a slightly moist and curdy texture. This cheese is aged long enough to develop a natural mold then wrapped in walnut leaves for further aging. Any red wine from Romagna made with the popular Sangiovese grape would be a good match for this cheese.
