This Tuscan sheep’s milk cheese is infused with thin slices of local truffles that are mixed throughout the curd before it is pressed into its final form. Aged a minimum of three months, this special pecorino offers a flavor which is perfectly balanced between the fragrant earthy truffles and the slightly piquant sheep’s milk. It is ideal for shaving over pasta, polenta and risotto, as well as fresh vegetables like asparagus. We like it best liberally grated over a frittata or some eggs.
