• While aging, many Italian soft cheeses develop a rind which blocks bacteria and helps to develop a silky, runny interior. Some soft cheeses like Taleggio are washed in a brine during aging which colors the rind and coaxes more distinct, imposing flavors from the cheese. Soft cheeses are typically aged for no more than 1-2 months so they retain moisture and a lively flavor and texture. During the short aging process, soft cheeses develop more a more complex character than fresh cheeses.
