From the pastures of the Stelvio Valley in the Alpine region of Alto Adige region comes Stelvio, a hard cow’s milk cheese also known as Stilfser in this German speaking region. Aged for 60 days, Stelvio has a red rind, small holes throughout, and a pungent, nutty aroma that is similar to many Swiss cheeses. It has a rich and buttery mouth-feel and is perfect for melting.
