Ubriaco di Capra con Traminer
Made by the Perenzin family in the Dolomite mountains of the Veneto, this cheese is made from the organic milk of goats that live in the purest of environments: the air is filtered by the surrounding mountains, and the terrain is completely secluded. Ubriaco, which means drunken, is so named because this semi-hard, goat’s cheese is aged in Traminer grape must. Aged a minimum of 6 months (3 in must), this cheese is an obvious match for wine. Try it with a Valpolicella or Prosecco, both produced in the Veneto.
