Ubriaco, which means drunken, is so named because this semi-hard cow’s milk cheese is aged in Marzemino wine. Made with the raw milk from two milkings, the young cheese curds are matured for almost three weeks and then covered in wine must to continue to age for six to ten months. The resulting cheese is the straw-colored Ubriaco with a fruity and spicy flavor.
