Mixed Wild Mushrooms, Merlini

Porcini (“piglet”) mushrooms are meaty wild mushrooms found in forests all along the Italian countryside. Common in Italian cooking, porcini are used in soups, sauces, alongside steak, and most popularly in risotto. Dried or in olive oil, these add richness and meatiness to any dish calling for mushrooms.
